This is a sweet bread you can feel good about. With almonds, whole grain oats, and the option for some protein powder, this is practically a post workout meal! The only sugar is the little used to caramelize the pears, and the rest is sweetened with maple syrup. The delicious, spicy chai flavor is achieved by infusing the coconut oil and the flavor profile is rounded out with the addition of a good amount of pure vanilla extract. 1 8inch loaf
Ingredients:
½ bosc pear, sliced
1 Tablespoon turbinado sugar
¼ cup coconut oil
4 Teaspoons of chai tea
1 cup vanilla oak milk
1 Tablespoon vanilla extract
¼ cup maple syrup
¼ cup aquafaba or 1 flax egg
1½ cup oat flour
½ cup almond flour
¼ cup vegan vanilla protein powder or additional almond flour
1 teaspoon baking powder
¾ teaspoon baking soda
½ teaspoon salt
Directions:
Preheat oven to 350 degrees. Spray an 8 inch loaf pan with baking spray and cover the bottom with the 1 tablespoon sugar. Arrange the sliced pear to cover the bottom of the pan.
In a small sauce pan, heat the oil to just before boiling and add the tea. Turn off the heat. Let the tea steep for 3-5 minutes then strain the oil before transferring to a medium mixing bowl.
Add the oak milk, vanilla, maple syrup, and aquafaba to the oil and whisk to combine.
In a another small bowl, mix together the remaining ingredients and then add to the bowl with the wet ingredients. Stir to combine and then pour over the pears in the prepared loaf pan.
Bake for 60 minutes or until a toothpick comes out clean.
Let cool for about 20 minutes before removing from the pan. Top with sliced almonds if desired and enjoy!
