Strawberry Balsamic Vinaigrette

Simple, low oil, balsamic vinaigrette slightly sweetened with fresh strawberries



While most store bought vinaigrettes are laden with fat and sugar, here is a quick and easy alternative without the added sugar and with only a fraction of the oil. With that being said, it is not overly sweet, but still packs a light and fresh strawberry flavor that pairs well with most tossed salads. We especially enjoy drizzling it over a baby spinach and arugula salad with chopped asparagus, fresh strawberries, and sliced almonds. Enjoy!



Serves 4-6

Ingredients:

½ cup balsamic vinegar

½ lemon, juiced

5 strawberries

¾ teaspoon salt

2 Tablespoons olive oil


Directions:
  1. Place all ingredients in a blender and blend until smooth. Store dressing in the refrigerator for up to 3 days.
