A healthy, one bowl meal perfect for busy weeknight dinners

In our house, fajitas are basically a weekly staple. They are quick, easy, healthy, and delicious! However, the orca beans are the real highlight of this meal, and the MVP is the instant pot. Cooking beans is typically very time consuming, but the instant pot changes all of that. Soaked orca beans (feel free to substitute black beans) only require 20 minutes of cooking time at high pressure. Just allow some time to come to pressure and naturally release and you can have beans on the table in about 40 minutes! While the beans are cooking, prepare the fajitas and chop the cabbage and cilantro. Then place everything in a large bowl and top with salsa and a squeeze of lime. Enjoy!
Serves 4
Ingredients:
Orca Beans
1 ¼ cup orca beans, soaked for 8-12 hours (with the Instant Pot, you do not have to soak the beans if you don’t have time, just add about 5-10 minutes to the cooking time)
3 ½ cups water
2 cloves garlic, crushed
1 teaspoon onion powder,
½ teaspoon cumin
½ teaspoon ancho chili powder
½ teaspoon dried oregano
¼ teaspoon smoked paprika
1 teaspoon salt
Fajitas
1 large onion
3 bell peppers
1 teaspoon coconut oil
¼ teaspoon salt
Directions:
Place all ingredients for the orca beans, except salt, in the instant pot and set at high pressure for 20 minutes, making sure the vent in sealed. When the cooking time is done, allow the pressure to naturally release for about 10-20 minutes before opening the vent. Stir in the salt.
While the beans are cooking, place all ingredients for the fajitas in a large skillet and sauté until tender and the onions have started to caramelize. Add water to the pan as needed to prevent burning.
Divide the fajitas and orca beans between four large bowls, add shredded cabbage, chopped cilantro, salsa verde, and a squeeze of fresh lime juice.
