This is one of my favorite protein smoothies to make. It is loaded with healthy fresh greens and nutritious cacao nibs, yet tastes like a mint chocolate chip milkshake. Is there a more enjoyable way to get your greens? While I like to make this just about any time of the year, I certainly think about it more come March when all things green are in. If you are looking for a healthy way to enjoy a green treat, give this a try! One of the great thing about this smoothie is it can be customized based on what you have. For this version, I opted for fresh Swiss chard and kale from my garden, but spinach or almost any other leafy green you have on hand (probably not arugula ;)) works great too. Also, I like to use fresh mint if I have it, but if not, then replace it with a drop of peppermint essential oil. Feel free to make it your own and enjoy!
Serves 1
Ingredients:
1 Cup unsweetened almond milk
1 Scoop plant based vanilla protein powder of choice (I like Tone It Up)
½ Frozen banana
½ Cup fresh leafy greens (I like Swiss chard and kale)
¼ Cup fresh mint leaves
1 Handful ice cubes
1 Tablespoon cacao nibs
Directions:
Place all ingredients, except the cacao nibs, in a high-speed blender and blend until smooth.
Add the cacao nibs and pulse to incorporate, but not puree.
Pour in a glass and top with additional cacao nibs.
