Gingerbread Latte Protein Shake

A healthy version of this festive beverage that is packed with protein, fresh ginger, and even some well-hidden veggies!


This is the perfect Christmas season protein shake. It satisfies those cravings for sugary gingerbread lattes while simultaneously providing an immunity boost (fresh ginger!) a healthy dose of protein, and a full serving of cauliflower! I know it seems like a crazy amount of cauliflower, but don’t let that scare you. It helps to make the shake the right consistency without adding sweetness, and you won’t even know its there! So whether you’re looking for a festive breakfast, a post-workout smoothie, or even just a fun way to sneak in some extra veggies, your search is over. Enjoy!


(Serves 2)

Ingredients:

2 cups unsweetened almond milk

2 shots espresso (or coffee alternative)

2 scoops plant-based vanilla protein powder (I use Tone It Up)

2 cups frozen cauliflower rice (I promise you can’t taste it!)

1-2 tablespoons blackstrap molasses

2 tablespoons almond butter

1 inch fresh ginger (peeled)

1 ½ teaspoons ground cinnamon

¼ teaspoon ground nutmeg


Directions:
  1. Place all ingredients in a blender and blend until completely smooth.

  2. Pour into two glasses and drink up!
