Double Dark Chocolate Truffles

These truffles are easy, delicious, and super chocolaty! #chocolate #decadent #glutenfree #soyfree #vegan



While these are a wonderful dessert to make on their own, it is also a great way to use up a thicker ganache left over from other recipes. Simply chill the ganache, whip if desired, and roll in high-quality cocoa powder. Another way to eat chocolate, no chocolate wasted, win-win!


8-12 Truffles

Ingredients:

4 ounces full fat coconut milk

8 ounces 63% dark chocolate

2 tablespoons maple syrup

1 pinch salt

3 tablespoons high quality cocoa powder (I like Guittard)


Directions:
  1. Place chocolate in a heat resistant bowl.

  2. Place the remaining ingredients in a small saucepan (except cocoa powder) and bring to a boil. Remove from heat and pour over the chocolate, making sure all chocolate is covered. Let the chocolate and coconut milk sit for 5 minutes before stirring. Stir until completely combined and then place in the refrigerator.

  3. If wanting to whip the ganache for a more airy truffle, chill until it thickens to a pudding consistency and then whip in a stand mixer unit desired consistency is reached (pictured truffles made this way). If wanting a denser truffle, chill until solid.

  4. Shape the desired amount of chocolate into a ball, then roll in the cocoa powder until completely coated. Repeat process until all chocolate is finished. Chill until ready to serve.

  5. Enjoy!
