Simple, grain-free cookies perfect for snacking or a healthy dessert!

If you like soft and tender cookies reminiscent of Nutella, then this recipe is for you! Besides being deliciously soft and chocolaty, the best part about these cookies is that they are completely guilt-free. With no refined sugars, flours, or oil, and a decent amount of protein, you truly can have your cookie and eat it too ;)
12-15 cookies
Ingredients:
1 ½ cup dry roasted hazelnuts
1 tablespoon ground flax seeds
3 tablespoons water
1/2 cup maple syrup
1 teaspoon vanilla extract
1/3 cup cacao powder
1/4 cup coconut flour
2 tablespoons chickpea flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup dark or semi-sweet chocolate chips
Optional garnish: melted dark chocolate and chopped hazelnuts
Directions:
Place the hazelnuts in food processor and process until smooth, this will take several minutes
Add in the flax seeds, water, maple syrup, and vanilla and process to combine.
Then add in the dry ingredients and process until fully incorporated. Stir in the chocolate chips.
Preheat oven to 350 degrees and line a baking sheet with parchment paper
With wet hands, shape the dough into balls and place them on the parchment-lined baking sheet (wet hands keep the dough from sticking to your hands and helps to keep the cookie balls smooth.) Slightly press down each cookie ball and bake for 10 minutes. Allow them to cool on the baking sheet for about 10 minutes before transferring to a cooling rack
Optional: drizzle each cookie with melted chocolate and sprinkle with chopped hazelnuts.
