These ridiculously healthy and delicious cookies are made from chickpeas and natural peanut butter, sweetened with maple syrup, and are chock full of 72% dark chocolate chunks. This may be the most fun way to get your legumes and antioxidants in ;)
Yields 16-20 cookies
Ingredients:
1 Can chickpeas, drained (reserve ¼ cup of this aquafaba) and rinsed
¼ Cup reserved aquafaba
¾ Cup natural creamy peanut butter
1/3 Cup maple syrup
1 Tablespoon vanilla extract
1 Teaspoon baking powder
1 Pinch salt
1 Cup dark chocolate chunks or chips (I like 72%, but any dark chocolate will work!)
Directions:
Preheat oven to 350 degrees F
Place all ingredients, except chocolate, in a food processor and process for about two minutes. Once the cookie “dough” is completely smooth, stir in the chocolate.
Spray a baking sheet with cooking spray and place scoops of dough on the sheet using two spoons (the dough will be very sticky), about 16-20 depending on desired size. Top with additional chocolate shavings if desired.
Bake for 15-17 minutes.
