Light, delicate scones with floral and aromatic notes, punctuated by crunchy pistachios, and drizzled with rose water glaze.

Healthy scones are some of my favorite things to bake – delicious, simple, and extremely versatile. Made with wholesome ingredients such as almonds and chickpeas (and not too much sugar, especially if you leave out the glaze), these scones can be a special breakfast, a mid day snack, or an after meal treat enjoyed with tea. Another perk of this recipe, while it is rather easy to whip up, the unique flavors and ingredients of cardamom, rose, and pistachios really add a gourmet touch. With the vibrant pink rose petal garnish, is it even possible to feel anything but fancy?!
Note: If you are like me and can’t find culinary rose petals in the store, don’t fret, you can easily make your own! I picked a few rose buds and petals from the garden and baked them at 200 degrees until they dried.

Ingredients:
Scones:
1 Cup almond flour
1 Cup chickpea flour
1 Teaspoon guar gum
1/4 Cup sugar
1 Tablespoon baking powder
1/2 Teaspoon salt
3/4 Teaspoon ground cardamom
1/2 Cup coconut yogurt
1/3 Cup melted coconut oil
2 Tablespoon rose water
1 Teaspoon vanilla extract
1 Tablespoon ground flax seeds
3 Tablespoons chopped pistachios
Rose Water Glaze:
¼ cup powdered sugar
1 ½ teaspoon rose water
Garnish:
Chopped pistachios
Dried rose petals
Directions:
Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
In a medium bowl, mix all the dry ingredients together.
In a separate bowl, combine the wet ingredients and then add to the dry mixture. Mix to fully incorporate.
Stir in the chopped pistachios, shape the scones as desired, and place on the prepared baking sheet. Bake for 18-20 minutes. Allow to cool completely on a cooling rack.
While the scones are cooling, prepare your garnishes.
Once they are cool, stir together the rose water glaze ingredients until perfectly smooth.
Drizzle the scones with glaze one at a time, topping each with desired garnish immediately as the glaze will harden quickly (if the glaze hardens before garnishing, the rose petals and pistachios will not stick).
