Cream cheese frosting is probably my favorite frosting. There is just something about that cream cheese flavor that makes it addicting and also very hard to veganize. That is until I discovered the brand Violife. Their classic cream cheese tastes practically identical to the real deal, and now there is nothing I miss from my dairy eating days. While this recipe may work with any brand of vegan cream cheese, the flavor is by far the best with Violife. The secret to achieving the fluffy consistency is whipping the cream cheese and butter for long time so don’t rush it! If a stiffer frosting is desired, just add more sugar.
approx. 3-3 1/2 Cups
Ingredients:
2 7-ounce containers Violife original cream cheese, room temperature
5 Ounces earth balance butter, room temperature (soy free if desired)
2 Cups powdered sugar, sifted
2 Teaspoons pure vanilla extract
Directions:
Place cream cheese and butter in the bowl of an electric mixer and whip on high for five minutes, or until light and fluffy, scraping down the sides of the bowl every couple minutes.
Add in the sifted powdered sugar one spoon at a time with the mixer running on low. Scrape down the sides of the bowl as needed.
Add in the vanilla and whip on high for two more minutes to fully incorporate.
